Grilled Amberjack

2 pounds Amberjack steaks  cut about 1-inch thick 
2 tablespoons olive oil 
Salt and black pepper
Lemon-pepper
seasoning

Brush steaks on both sides with oil. Season to taste, being generous with the lemon-pepper seasoning. Place in the center of the cooking grate. Cover grill. Cook, turning once halfway through cooking time, until fish is opaque but still moist in center (about 10 minutes). Season to taste.
