Fried Dolphin - Mahi Mahi

2 pounds dolphin cut into fingers approx 2” by 3”
2 cups milk
1 egg

Vegetable oil, for frying
1 box Zatarain’s Fish Fry
2 tablespoons Bisquick
Salt, black pepper,
Tony Chachere’s

Lemon wedges accompaniment

Place the dolphin in a bowl with the milk and beaten egg to coat.  Let sit for a few minutes.
Preheat two inches of vegetable oil in a large pot to 375 degrees F.
In a large bowl (or zip-lock bag), combine the fish fry and bisquick. Add the Dolphin in batches, turning to coat evenly, and shaking to remove any excess batter.  Fry in batches in the oil, turning to cook evenly. Cook until golden brown, about 3 to 5 minutes. Remove and drain on paper towels and season to taste with salt, black pepper and Tony Chachere’s.
